The green table olives of the Konservolia variety are harvested gently when unripe, largely by hand. Directly after harvesting, the MANI green organic olives are pitted and naturally de-bittered. Naturally debittered means that the olives are soaked in a sea salt brine to flush out the bitter substances and soften the taste.
After the natural debittering, the spicy, Naturland Öko + Fair certified green olives are pickled again in a fresh brine consisting of water, sea salt and lactic acid (acidifier). The pitted green olives in brine are in raw food quality and are a real delicacy pure as an appetizer, in salads and also in warm cuisine.
