The pickled vegetables (aubergines, peppers, courgettes) in olive oil are a delicacy from Tuscany. The ingredients - courgette, aubergines, peppers in various proportions, extra virgin olive oil, wine vinegar, oregano, sea salt - are from controlled organic farming. The high quality ingredients as well as the gentle processing give this speciality a wonderfully aromatic, piquant and juicy flavour.

Vegetables pickled in olive oil are ideal as starters (antipasti), in salads and in dips. Also excellent as a pasta sauce (Grigliata di verdure - drain the pickled vegetables and puree them with a clove of garlic and some pasta water - mix the sauce with the cooked pasta and heat it up briefly)
