The Aceto Balsamico di Modena IGP ‘Etichetta Gialla’ or ‘the one with the yellow label’ for short is one of the high-quality aceto specialities in Bellei's Precious line with its high density and long ageing time. With a viscosity of 1.24, Aceto Balsamico di Modena IGP (yellow label) is well above average. This is because a conventional Aceto Balsamico di Modena from the supermarket usually only has a density of 1.06. The Aceto Balsamico di Modena IGP ‘Etichetta Gialla’, on the other hand, already fulfils the minimum viscosity requirements of an Aceto Balsamico Tradizionale di Modena.

The creamy texture not only testifies to a long ageing period of approx. 8 years in oak barrels, but also to a high proportion of cooked grape must. The high quality standards, traditional maturation and exclusively Italian ingredients result in this exceptional flavour experience. The intense flavour of ripe fruit, accompanied by warm notes of cardamom and vanilla, reveals the complexity of this high-quality balsamic vinegar. There is a basic rule of thumb. High-quality aceto with a naturally high density should not be heated and is more suitable for refining and flavouring cold or already cooked dishes. Whether savoury or sweet. Many dishes such as seafood, meat, cheese and fruit can be excellently flavoured with a high-quality Aceto Balsamico di Modena. There are no limits to your creativity. Here are a few recommendations from us:

Salmon tartare with orange blossom honey & balsamic vinegar dressing

  • Ingredients for the tartare: 200g smoked salmon, 200g very fresh salmon fillet, 2 shallots, 1 bunch of fresh dill, lime juice from 1 lime, extra virgin organic olive oil
  • Ingredients for the dressing: 3 tbsp orange blossom honey, 1 tbsp high-density Aceto Balsamico di Modena IGP, 1 tbsp lime juice, 1 pinch of jalepeno lemon spice
  • Preparation: For the tartare, finely dice the salmon (both types) and shallots, chop the dill, season with lime juice, olive oil, salt and pepper, mix everything together and leave to marinate in a cool place for at least 2 hours. For the dressing, place all the ingredients in a sealable jar and shake vigorously.

Figs with balsamic vinegar and mascarpone vanilla ice cream:

  • Ingredients: 2 fresh figs, high-proof balsamic vinegar, 250g mascarpone, 250g sweetened condensed milk, 1 tsp vanilla extract, 125ml whipped cream
  • Preparation for the mascarpone and vanilla ice cream: To make the mascarpone and vanilla ice cream, place the mascarpone, sweetened condensed milk and vanilla extract in a bowl and mix with a hand mixer until creamy. Whip the cream until stiff and fold into the cream. Then pour the mixture into a freezer-proof bowl (with a lid) and leave to freeze for approx. 6 hours, stirring occasionally.
  • Preparation for the fig and balsamic topping: Halve the figs and drizzle with balsamic vinegar. Serve with the mascarpone and vanilla ice cream. If you like it a little sweeter, you can also use orange blossom honey.
