Organic Farfalle I Demeter pasta from Sicily

The organic farfalle made from 100% durum wheat semolina (pasta di semola di grano duro) are produced by the Salamita agricultural cooperative in Sicily. The Salamita agricultural co-operative comprises 76 Demeter and 34 organic farms, all of which are based in Sicily. The organic and Demeter durum wheat semolina (semola di grano duro) for the pasta comes from biodynamic farmland near the picturesque Sicilian town of Barcellona.
and from the hilly regions in the centre of Sicily. This region is considered the granary of Italy and is an important part of Italian pasta culture due to the traditional cultivation of durum wheat.

How to cook organic Farfalle?

For best results, we recommend using a large pot - ideally around 6 litres of water for 500 g of pasta. Salt the water generously so that the pasta absorbs the flavour well. The specified cooking time is approx. 10 minutes. Our advise: Try after just 8 minutes to see if the pasta is ‘al dente’ - i.e. firm to the bite, which is the favourite way to eat pasta in Italy.

A little recommendation for extra flavour:
Take the pasta out of the boiling water a little earlier, around 8 minutes, and add it directly to your sauce. This allows the pasta to absorb the flavours of the sauce (whether tomato sauce or al ragù) and finish cooking with it for another minute or two. This takes the flavour of the dish to a whole new level!
