The Italian organic and biodynamic spaghetti come from Salamita, an agricultural co-operative that has existed since 1972. Today, the association comprises 76 Demeter farms and 34 organic farms. The organic & Demeter durum wheat semolina (semola di grano duro) for the pasta comes from biodynamic farmland near the picturesque Sicilian town of Barcellona in north-west Sicily around the majestic Mount Etna. The spaghetti pasta is made from 100% durum wheat semolina (pasta di semola di grano duro) and water. The pasta is free from additives.
For best results, we recommend using a large pot - ideally around 6 litres of water for 500 g of pasta. Salt the water generously so that the pasta absorbs the flavour well. The specified cooking time is approx. 9 minutes. Our advise: Try after just 7 minutes to see if the pasta is ‘al dente’ - i.e. firm to the bite, which is the favourite way to eat pasta in Italy.
A little recommendation for extra flavour:
Take the pasta out of the boiling water a little earlier, around 7-8 minutes, and add it directly to your sauce. This allows the pasta to absorb the flavours of the sauce (whether tomato sauce or al ragù) and finish cooking with it for another minute or two. This takes the flavour of the dish to a whole new level!
Spaghetti is one of the best-known and most popular types of pasta in the world and is an indispensable part of Italian cuisine. The name is derived from the Italian word ‘spago’, which means “string” or ‘twine’ - a fitting name for the typically long, thin shape of the pasta. Traditionally, this type of pasta is made from durum wheat semolina and water. This is also the case with Salamita spaghetti. However, the durum wheat semolina comes exclusively from biodynamic farming in the hilly regions of inland Sicily. This region is considered the granary of Italy and is an important part of Italian pasta culture due to the traditional cultivation of durum wheat.
Salamita spaghetti is ideal for a variety of sauces - from simple aglio e olio to classic bolognese or a summery pesto. They are also excellent with our pronto sugo from Calabria. Spaghetti is a classic - simple, honest and always good!
