The flavoursome paste made from olives, herbs and olive oil is an important ingredient in Mediterranean cuisine. It can often be found on mezes, antipasti or tapas platters (appetiser platters). However, it is known by a different name and recipe in every Mediterranean country. In Spain, the cream (usually made from black olives) is called olivada and is often served on toasted baguette with olive oil. In the south of France, it is known as tapenade, whose main ingredients are pitted olives, anchovies and capers.
