"Verjus (also known as verjuice) is a sour juice made from unripe grapes. The name comes from the French: ‘vert jus’ means ‘green juice’. It is often praised as an insider tip for good cuisine - and rightly so, as verjuice can be used in many different ways. Be it as an elegant alternative to vinegar or lemon juice for salads or marinades or as an aperitif in modern bar culture. (e.g. as a verjus spritz ). Verjus lends dishes and drinks a harmonious acidity with plenty of fruit, without being overpowering. Verjus from the Andres winery in the Palatinate is wonderfully fresh and green with a grapey flavour. There is also a slight hint of green asparagus, sorrel and herbs. On the palate, it presents itself with flavours of citrus fruits, quince and grapefruit.
